Do Ahead

Prepare the mint-honey syrup up to 3 days ahead and refrigerate; juice the lime fresh just before making to preserve its character.

Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice (Juiced to order for brightness.)
  • 0.75 oz mint-honey syrup (Made with equal parts honey, water, and a handful of fresh mint leaves.)

Instructions

  1. 01 Add white rum, fresh lime juice, and mint-honey syrup to a shaker filled with ice.
  2. 02 Shake hard for 15–20 seconds until the shaker feels ice-cold in your hands.
  3. 03 Double strain through a fine mesh sieve into a chilled coupe glass.
  4. 04 Garnish with a single mint leaf lightly slapped to release its aroma.

If It Goes Sideways

  • Drink tastes too sweet, the syrup may overpower — adjust lime slightly and shake harder next round for better balance.
  • Foam dissipates immediately, your shake wasn't vigorous enough — chill your glass more and shake with larger, harder ice cubes next time.
