Tonight leans tall and breezy, so we take the Sidecar and make one clean swap: gin for cognac. Same Sidecar ratios, but the juniper and citrus oils snap to attention, then we lengthen the pour with cold club soda in the glass so it reads highball on a rooftop without losing that orange-and-lemon core.

For a zero-proof take, use a non-alcoholic gin alternative and a splash of NA triple sec, then keep the lemon and soda the same. Chill the coupe well and build the soda in the glass after shaking—adding bubbles to the tin knocks them flat.

Do Ahead

Lemon juice can be pressed a few hours ahead and the coupe chilled; shaking with ice and adding soda must be done to order for proper texture.

Ingredients

  • 1.5 oz London dry gin (Twist: gin in place of cognac)
  • 0.75 oz Cointreau
  • 0.75 oz fresh lemon juice
  • 2 oz chilled club soda (Built in glass to make it a rooftop highball)
  • Lemon peel, expressed (Garnish)

What Done Looks Like

In the glass, the drink should look pale gold with a tight, lively bead rising through the center. The shaker should have sweated aggressively and feel slippery at 8–10 seconds; stop while it’s still painfully cold so the soda lift stays crisp and the citrus doesn’t dull.

Instructions

  1. 01 Chill a coupe thoroughly; optional sugar rim if desired, then set the glass back to chill.
  2. 02 Add gin, Cointreau, and fresh lemon juice to a shaker with plenty of cold ice.
  3. 03 Shake hard for 10 seconds until the tin is frosty and the mix is well chilled.
  4. 04 Add 2 oz chilled club soda to the empty, chilled coupe.
  5. 05 Double-strain the shaken cocktail into the coupe over the club soda to preserve a fine bead.
  6. 06 Express a wide lemon peel over the glass and place it on the rim or discard.

If It Goes Sideways

  • Bubbles vanish on contact, the soda was added to the shaker—rebuild with fresh soda in the glass and strain the shaken base on top.
  • Drink tastes harsh and thin, the shake was short and the citrus unbalanced—add 3–4 more seconds of hard shake next round for proper chill and dilution.
