We take the classic Margarita and swap Cointreau for St‑Germain, then blend it with ice. Elderflower softens the edges of blanco tequila and leans into ripe summer fruit vibes without piling on sugar. It drinks sunny and clean by the pool, with that lime snap still steering the glass.

For a zero‑proof take, use a non‑alcoholic tequila alternative and 0.75 oz St‑Germain syrup (equal parts St‑Germain and water) in place of the liqueur. Freeze the rocks glass while the blender runs so the texture stays frosty instead of slushy soup.

  • 2 cups pebble ice or 10–12 standard cubes (for blending)
  • Kosher salt or Tajín, for optional half rim
  • Lime wheel (garnish)

What Done Looks Like

The right texture looks like soft snow that domes above the rim with a glossy sheen, not watery slush. The blender pitch deepens and smooths when the ice is fully shaved; stop while it still holds shape instead of running thin in the pitcher.

Instructions

  1. 01 Chill a rocks glass and, if desired, half‑rim it with kosher salt or Tajín by swiping a lime wedge and dipping lightly.
  2. 02 Add blanco tequila, fresh lime juice, St‑Germain, and agave syrup to a blender.
  3. 03 Add 2 cups pebble ice (or 10–12 standard cubes) and blend on high for 10–15 seconds until smooth but still aerated.
  4. 04 Tap the pitcher to drop trapped bubbles; the blend should mound softly without running.
  5. 05 Pour into the prepared rocks glass, letting it dome slightly over the rim, and garnish with a lime wheel.

If It Goes Sideways

  • Blend pours soupy, too little ice or over‑blended—pulse in a handful more ice for 3–4 seconds to regain body.
  • Drink tastes flat and sweet, lime is shy—add 0.25 oz fresh lime and 2 quick pulses to pull the acidity back in.
